The least worked muscle on an animal is where we get filets. The second least worked muscle is the Teres Major. So, it’s just as tender as a filet and it is just as lean, but it’s packed with even more beefy flavor.
They’re small - no bigger than a pound and very versatile. You can grill, broil, bake or even stuff it. You can marinade, but you really don’t have to. Treat just like you would a filet. We sear on both sides in a cast iron and finish in the oven.
This crazy, cool cut actually gets bigger when you cook it. And as always, use a thermometer, people!
